When a massive influx of Russians immigrated to Israel in the 1990s, entrepreneurs at Kibbutz Dan in the Hula Valley came up with the idea of making local caviar. They were already farming fish, so it seemed like a natural next step. It wasn’t as easy as expected, however. When is it ever? Instead of relying on tradition though, the northern fish farmers – in true Israeli style – turned to technology to overcome their challenges instead. Caviar Galilee is now the sole farm of its kind in the Middle East and its premium caviar is sought out by buyers all over the world, including Michelin restaurants. This is one of those stories that really captures the essence of Israel. A tiny player in a big market, uses ingenuity and innovation to find a way to the top.
