Good, high quality protein is one of the more important parts of the human diet, but it seems like the tried-and-true method of factory-farming livestock has a couple of issues. Things like absurd water requirements, massive amounts of required land (in THIS real estate economy?), and the complete disregard for the quality of farm animals’ lives are proving to be a major bummer. Well, luckily, for the past decade or so Israel’s top minds have been diligently inventing ways to get good protein out of all kinds of sources that don’t have a face: algae, soy beans, peas — and most recently, banana leaves. The folks over at Day 8 have come up with a way to turn what is essentially a huge amount of agricultural waste — in the form of discarded banana leaves — into a viable source of protein for you and the kiddos to enjoy around the dinner table.
