Take a walk through any of Israel’s food markets and you’ll be amazed at the huge variety of olives on offer.

Black, green, stuffed, pitted, Israelis love their olives in all different shapes and sizes.

In the last few years Israel’s olive industry has grown dramatically from 2,000 dunams, to 330,000  (81 acres). The quality of the olives has also risen, and Israel today has become famous as a producer of new boutique olive oils that rival some of the best in the world.

Olives are healthy, they taste divine, and for true devotees, there’s even an olive-pit spitting competition.
